Cold smoking with soldering iron or pellet smokers

Post by RubberToe » Thu Dec 20, 2012 10:19 pm

Hey all, I'm trying my hand at cold smoking some cheese. I'm working on my technique using 500g blocks of cracker barrel old cheddar that was on sale at the SS.

I recently discovered the soldering iron in a can of wood chips method so I'm giving that a go right now.

I see A-MAZE-N has a couple types of cold smoke generators that people seem to really like. There's a square and a tube one. I have half a mind to order one or print off some pictures and bring them to one of the stainless steel shops here.

I was also thinking about making a ghetto one from layers of tin foil and poking holes in it for air flow.

As for the wood "pellets" I got a cheapo blender for $4 at the second hand store to abuse and grind up my wood chips a bit finer for that.

What are your guys' thoughts on all this?

Thanks,
-Rob

Nash has a post here somewhere with cheeses smoking pics I'm sure. We use our smokers with really small fires.

Actually for salmon and cheeses I use a soldering iron and plastic fish crates. I find I can control the heat and smoke a little better that way

Do you have a charcoal grill now? It's easy enough on one with a small fire. Cheese is epic enough done in the electric box smoker but quite a bit better done over a real coal fire :cheers2:

Thanks guys. I can do charcoal in my electric rig too. I'll try it that way next, which will be today or tomorrow... I have 3 more packages of cheese to experiment on.

Rob

Could you take a pic of your iron and wood setup?

Sandy

I use the soldering iron in the tin can trick too. It works like a charm although it does take at least an hour to get the wood chips hot enough to really start smoking. My favourite thing to smoke is super ripe plum tomato with a bit of sea salt and oil on it, finished with a small splash of vinegar.
