Master Brewer Greg Nash Hits Rockbottom
HALIFAX, NS ‐ Rockbottom Brewpub, the cozy establishment below the ever‐popular Your
Father’s Moustache, is pleased to welcome an exciting new addition to the team.
Local master brewer Greg Nash is setting up camp behind the glass of Rockbottom’s
brewery window, upgrading equipment and preparing to overhaul the present microbrew
offerings.
Rockbottom is approaching its third anniversary, and owner Shaun O’Hearn is looking
forward to improving his already successful brewpub.
“We’ve had a lot of great feedback since we opened our doors nearly three years ago, but I
want to push things further,” O’Hearn said. “Greg comes to us with a vast knowledge of
brewing and he’s so passionate about his beer. He will appeal to true beer lovers, but will
also make beer lovers out of people who don't normally consider themselves beer drinkers.
“He loves pushing the envelope on brewing beer and usually has at least one seasonal beer
on tap,” he said.
Nash hails from Amherst, Nova Scotia, where his passion for beer lead him away from his
previous life as a meat cutter, Christmas tree farmer and automotive paint technician. He
started working in the craft beer industry in 1994 and honed his skills at the American
Brewers Guild in Davis, California. Nash has since brewed professionally in several states
and provinces at breweries including Garrison Brewing Company, Pump House Brewery,
and Hart and Thistle Gastropub & Brewery.
Until now, Rockbottom had its wort cooked off site and brought in, then fermented and
carbonated on site. Nash, who is known for his skill at brewing from scratch, plans to
revamp the menu with a fresh selection of precisely handcrafted beers. His passion for food
has also grown immensely since working in the industry, so watch for expert food and beer
pairings or possible new menu items involving beer.
O’Hearn hopes to have the new brews available this month.

Anytime any of the Brewnosers are up for a little fun in the brewhouse just say the word. With the malt stored upstairs and the spent grain needing to go back up and out I need all the help I can get! Plus, there's enough room in this brewery for some guest brewing

Still hoping for the first week of December. I'm just holding off another couple days before making any announcements because I am having more work done in the brewery. I need to be sure they can get the stuff done in time for me to get the beers ready. I pulled all the tanks out of the walk-in cooler to give them and the cooler the cleaning of their lives to discover the floor slopes away from the one lone drain. The first five beers aren't perfect but they are starting to taste damn fine, fermentations are all complete, IPAs are dry-hopped and starting to taste great. A faulty thermometer on my water blending system threw my mash temperatures off a bit low on the first three batches so gravities are lower than I planned for and efficiency on the DIPA sucked but all in all everything is tasting really good.
The initial launch will look like this:
Buck Wheat - American Weizen 5% ABV 12 IBUs
McNab's Brown - English style Brown Ale 5.5% ABV 17 IBUs
Hop Flash - West Coast IPA 6.9% ABV 70 IBUs
Jacktar Stout - American Stout 6.7% ABV 70 IBUs
Hop Warrior - Double IPA 8.0% ABV 100+ IBUs (305 Calculated)

I just can't figure out why concrete guys can't figure out that the floor always needs to slope towards the drain! That's been the name of the beer for three years so I think they're safe!
The owners are now thinking about renaming the beers to a nautical theme, regardless the beers are what they are and should be launched December 5th or 6th.
Stonhard are doing the cooler floor up with epoxy and urethane so I can put the tanks back in by Wednesday provided everything goes as planned.
