I am drinking the APA on my deck. It's very good especially for a first release. Definitely bearing Greg's signature. Hops are the main driver here both in aroma and taste. Some of that vegetal thing he gets from cooked hops more than any other brewer I know. - the taste of the plant, not just the acids. And a long dry finish.

Picked up a DIPA and an IPA. Currently drinking the DIPA, and it's deelish. The first thing you'll notice is the crazy fruity hop aroma. A big punch of super ripe mangoes, pineapple and oddly enough, maybe a hint of mint, or maybe it's the hop freshness. There's some needed/wanted hop dankiness too. For the taste, I'm quite surprised it's 100+ IBUs since the bitterness to me seems lower, but the hop flavour very well done with a malt backbone that balances well with the bitterness and flavour. The bitterness is smooth, not a bit of harshness at all. Finishes dry, as a DIPA should. Not alcoholic, very enjoyable, but still strong. Love it. Finally! A startup brewery has been able to hit it with their first beer release, unlike many other startups in NS. Exactly what I expect. There is a signature Nash aroma and flavour in there, maybe it's what brewnoser mentioned earlier, not sure, but it's like a comfort blanket. I'll have to keep tasting to see if I can pinpoint it

Epic brewery opening today! Glad to see some Brewnosers in line to buy the beer! Nash has helped many of us on this board and it's great to see him in control of his own Brewhouse!

A couple things I'd like to touch on here... the IBU numbers are calculated not actual. I'll do some actual lab testing to get firm numbers when I'm done playing with and tweaking the brews to taste. I labeled the DIPA 100+ because that's what I call any big beer that has an actual calculated number that's far higher than that. I do have a way of balancing bitterness without the use of sugars and it's been well utilized here in the DIPA.
Hop procurement had been a bit of a bitch so in no way do I have my preferred varieties to use here. In fact I'm using some I've never tried or tasted before.
Sooooo...... bare with me as I tune these brews in to where I want them. I'm reasonably happy with what I have out of the gate though. We're off to the races!

Congrats on the opening Nash. Enjoying the APA in Ottawa. Wish I got to try the DIPA but I guess I will just have to come back to the fine-tuned product
