8.70 kg Viking Pale Ale Malt (3.0 SRM) 66.3 %
1.16 kg Oats, Flaked (1.0 SRM) 8.8 %
0.90 kg Wheat (Shoreline) (3.0 SRM) 6.9 %
0.46 kg Viking Cookie Malt (30.5 SRM) 3.5 %
1.00 kg Milk Sugar (Lactose) (0.0 SRM) 7.6 %
1.50 oz Northern Brewer - PM [10.60 %] - Boil 60 min Hop (23.7 IBUs)
1.00 oz Hallertauer Mittelfrueh [4.40 %] - Boil 15 min Hop (3.3 IBUs)
1.00 oz Hallertauer Mittelfrueh [4.40 %] - Boil 5 min (1.3 IBUs)
22g US-05 dry yeast
Mash @ 156 F
Ferment at 18C
500g (250g per fermenter) vodka soaked cocoa nibs added towards the end of fermentation
400g (200g each) Whole Columbian dark coffee beans steeped for 5 days

What is this trickery ? A roasty chocolate blonde-ish beer ? Kind of oxymoronic , This is my first white stout so it threw me off big time. I didn't know what to expect , but it checked all of the boxes. Roasty , chocolate, thought I got some vanilla, mabey it was the lactose. Great carbonation and head retention. Great job Cat !

This was also my first introduction to a white stout. Full bodied with rich flavours of dark chocolate and coffee, and maybe some floral notes from the Hallertau. I did not find it roasty at all. Very enjoyable!

Not as roasty as some other examples I’ve had. Had to look at the recipe to try to figure out where the fruity thing I was getting was coming from: most likely the coffee, maybe with some help from the vanilla and lactose. Definitely an interesting beer; thanks for the share!

I wonder if maybe there was something wrong with mine. All I got from it was ashtray - both aroma and flavour. Two sips was all I could muster.
