:lol: I wondered. Thanks. I think I tried it before mixed with Styrian Goldings and didn't like the beer much. Would any one like a pound of Willamette? Would you like them woody? I can put them in the mail. They are nitrogen flushed Hop Union.

What would be a good aroma hop to try out next in a smash? The hops I know now are cascade, styrian goldings, Amarillo and Galaxy.

I mix them with equal parts EKG and love the combo in a pale beer. I do 0.75oz of each hop at 10, 5, flame out and 1.0oz of each at dry hop. Make a great beer IMO.

+1 Willamette + Goldings is a good combo.

Although not strictly aroma hops, simcoe and citra are great hops for smash.

Fermenting: Oud bruin/Vienna Pekko SMaSH
On tap: Nelson dry hopped Berliner/ Scottish Heavy 70-/ NE IPA

Thanks for the help.

Now I’m thinking maybe I should make a single hop best bitter and use EKG with FWH and late additions. That way I can learn EKG, and bitter is in keeping with the real ale theme.

It’s a personal thing but I really can’t drink malty beers, they turn my stomach, so I need to get around that, and preferably I’d like to avoid crystals for that reason. I need to figure out if I can use one of my favorite malt profiles of MO and Munich 11 and still call it a bitter. I’m sharing half a can of Boddingtons with Kathleen and I don’t mind it. I couldn’t drink the London Pride at all (way too malty for me) and the propeller ESB is also too malty for me although I can drink it and might have another ...we picked up some beers from the NSLC to get some ideas. Maybe I shouldn’t even be making a bitter?

Never made a bitter. I need to do some research. I decided not to make an ESB because I thought that would need a stronger malt profile.

Any tips would be great. Maybe there’s a better choice of hops for a single hop bitter.

Also Jon, I like the idea of the Simcoe or Citra smash. Those were another two hops I’d like to try. I’m guessing pilsner would be better than MO for that smash but have no idea. What would you say?

I think you may be dismissing crystal malts a bit too quickly. I don't know what your previous experience is, but like all other ingredients you can use them for a subtle effect as well. They're defiantly a useful weapon in the arsenal.

The BCS bitters are a good start IMHO.

+1, crystal malts have their uses, although they are sometimes overused by homebrewers (myself included). Now I try to have my crystal less than 10% of the malt bill.

Have you tried malts like vienna, brown/amber, victory, biscuit, aromatic, and melanoiden? They give interesting flavours without being overly sweet like the crystal malts.

If I were to make a single hop bitter, I would try challenger or bramling cross, great British hops.

I've made MO Simcoe smash and it turned out very good, but I can also see it work with pilsner. A Citra IPA also came out very nicely, and amarillo/citra combo even better :cheers:

+1 Be careful with crystal! I got carried away trying to get a certain colour and ended up with too much sweetness in my last bitter. Thankfully dry-hopping hides a multitude of sins :cheers:
