Pulled pork take two. Hickory and bourbon barrel chunks for some extra flavor. Pretty happy. When back from vacation I'm going to have to try a brisket.

Here is the finished product.

It is one of my favourite recipes, very tasty and pretty good for you (except for the high sodium levels).
I make stock with carrots, cellery, leeks, garlic, thai red curry paste, fish sauce, white wine, water, and some vegetable or beef broth and let boil for a while, then sieve the stock and throw out the veggies. I then add coconut milk, lobster, and chopped red bell peppers, and heat it a bit before I add a bit of cream and garnish with parsley (as my wife hates cilantro, but cilantro is very tasty in it as well). I can post the whole recipe when I get home from work tonight. It is also tasty with other seafood such as scallops, halibut and even haddock or cod.

Looks good. I may need to try that curry soup sooner than later. What beer would it pair best with? An IPA?

2 hr salmon cure.... smoked..... snackage...
Fathom...
FRESH veg and chops... Smoked sweet potato fries plowed with Cajun spice.... Caramelized...
Fuck Gumbo. I'm making Louisiana-style Tom Yum....

I like saisons with it, but I am sure IPA would be fine as well.Keith wrote:Looks good. I may need to try that curry soup sooner than later. What beer would it pair best with? An IPA?

Aside from in a curry, the Weber marinade is my favourite way to cook it.Jimmy wrote:I gotta get on the bok choy train one of these days. I've never tried it.

The glass is fine in there for the most part, but I stopped using it because it was a bitch to clean the outside.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.
