Kathleen made fillet steak with sage and stilton sauce, fried mushrooms and cherry tomatoes, duchess potatoes. Masi wine. Forgot to take the picture before it was all eaten. :lol:

Pleased to report that I was able to follow the previously posted Reinhart recipe for pizza dough and let this pizza go for 9 mins at about 600F.. Suppose my stand mixer did the majority of the work, so I hate to take too much credit for the very good results. Anyway, I let it ferment cold for 24 hours and got some very manageable dough that ended up a fantastic pizza. Thanks to all for the great tips on kamado pizza. I'll try again tomorrow a little hotter. :cheers2:

Looks awesome, Sanitarium. Good work on the dough recipe. BTW, the recipe doesn't really spell it out but use bread flour, All Purpose just doesn't cut it. For me and my setup on the Primo, a thoroughly preheated 500 f is about perfect for 3 - 5 minute pies.

I was in pie mode yesterday as well...

Not for that recipe. I've done it but she's super difficult to handle, closer to a liquid than a solid :lol: I up the flour and reduced the water by quite a lot when using type 00.

With regular flour I always add the 'optional' 2oz olive oil then reduce the water by 2 - 3oz to get a more workable hydration rate as well. You'll notice a significant improvement using bread flour over AP, so get on it and post back with photos!

Reduced my pineapple ipa, pureed a pineapple, and put in some brown sugar.

Chicken was wicked. Juicy, the sauce was bitter and tangy. Which paired well with the brown sugar carrots.

Really happy with how it turned out. Definately making that sauce again.
