Tony, Looks like you do a lot of late hopping and dry hopping, and win medals while you are at it.
I'm looking at whirlpool hopping and hop stands. Did you ever get into that, and is it all it's cracked up to be?

Nope never got into it. Dry hopping is as far as I need go to get the flavour I want, although a Randell do make a brew taste wicked.

I'm worried when dry hopping I'll introduce an infection of sorts into my beer. Is there anything I need to do prior to adding my hops? I may adjust the recipe and dry hop with .5 an ounce for a few days.

Hops are a natural source of preservatives and combined with the alcohol present in the beer and the acidity of the beer, I never worry about infections when adding dry hops. I usually dry hop for a week

You're not supposed to worry about that. Hops are incredibly antiseptic.

Yeah, I'd say that ~22% crystal is a lot. Keeping it under 10% is where I'd want it, personally.

I've adjusted the recipe, and adjusted the hoping a bit. I took the 30 minute addition and made it a 15 min addition. I appreaciate the input!
12L Boil, 23L Batch

.5kg Crystal 20 for 20 mins (10%)

4.5kg Light LME (90%)
Hops: (all Calypso)
1oz 60 min
.5oz 20 min
.5oz 15 min

Due to everything I have lined up for beers right now. I still have 2 IPA kits I need to brew, so I'm moving forward with a Cream ale using these hops. Also Chalmers, do you know when you are heading back to the rock and meeting up with Tony? I'd like to send him his Uncle Leo's he's been craving.

That's an old recipe when I was making an IPA with them, but due to the amount of IPA's I have to go through, decided on something light. Didn't post the recipe yet.

Nothing solid, but probably during April. Happy to take Tony his fix.

Thinking the same. US-05 should get you lower than that even in a 1060 beer. I would expect if you are using a good brand of extract you would get it down to at least 1012

Calypso WFM
Boil 2.5 Gal
Batch 5 Gal

3lb Pilsen LME
3lb Light LME
