Bit of a trick question you had there, but is this because the 'smoke ring' actually isn't from the smoke but from a chemical reaction with the 'charcoal' (which comes from wood like smoke of course) fumes?
So how much 'smoke' flavour do you think these had?

They didn't have any smoke flavour. Don't get me wrong you can tell they were cooked over coals and not in an oven but they weren't smokey in the slightest. Some people say the nitrite ring does contribute to flavour and others say it doesn't. Those that say it does compare it to meats cured with nitrites or without claiming one version tastes slightly different than the other. I'm not sold on that but I don't really care either way, I've cured meats both ways and they're all good and that's all that counts

Weekend smoking
2 cured picnic roasts
2 3lb slabs of cinnamon maple bacon
dinner plate of left over ham (had to nuke it at work so its grey (booo)) scallop potatoes and smoked Bush's beans w/ BBQ Sauce and pulled pork
and lastly, my assistant pitmaster this weekend. He kicked around for nearly an hour.
I have learned i need to get better at taking pictures though

Those ribs look good. I saw a couple really nice slabs at SS this week, but I've got to clear out my freezer first. What are you usually cooking the beef ribs at?
Got a big project for tomorrow. Grilled veggies, burgers, steak and such for 12 people (at least) on a $99 Walmart grill, lol. I managed to get 20 chicken drumsticks done last night, so I'm keeping my fingers crossed...

Pastrami trial run. After 8.5 days in the brine cure I did up a half piece of it just to see... A spot in dead center about half the size of a golf ball not cured
