Post by BigSpruce » Wed Oct 09, 2013 4:30 pm

Sweet time at Hoptoberfest guys. Thanks for the invite. Bitter Get'er India now on tap at Maxwell's Plum. It's our first 4 tap location. Joining it are Regatta Red, Cereal Killer and Kitchen Party. Thanks again.

Excellent! Thanks for the beer and glasses. Both were greatly appreciated by the guys. We'll have to do something again sometime, maybe down your way.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

Thanks for that - it was good to meet you at hoptoberfest. Thanks as well for the Hoppily Married. There was a small turnout at the meeting last night but we all enjoyed the beer. I've been quite happy with the products coming out of your brewery.
Brewing right now: whatever is going on tap at Stillwell in a few weeks.

Thanks for bringing the beer Jeremy and participating in brewnosers activities such as Hoptoberfest, the hockey pool (aka your donation) and doing a pro-am beer with spears104 from the CB chapter. It's always nice to see pro brewers helping out and recognizing the homebrew community. :cheers2:
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

I see Big Spruce has a new website, but the "unfiltered" blurb has me confused:
We refuse to filter the goodness out our beer, so each of our batches takes a minimum of 18 days to brew, ferment and condition while the cloudiness gently disappears. This is at least 3 times slower than other craft breweries and it results in a slow produced beer that is wonderfully full of flavor from our fermentation stage.
Really? Other craft breweries are generally serving beer in 6 days or less after brewing? :?

The 18 day quote stood out to me as well.

Edit: I meant the part about 18 days being "at least 3 times slower" than other craft breweries.

Yeah, I don' know about that. I have had kpp from there that was basically undrinkable because of the yeast in the beer. There was actually yeasty floccing out at the bottom of the glass.

Looks like it's been updated on the website. The new blurb is :
We refuse to filter the goodness out our beer, so each of our batches takes 18 to 30 days to brew, ferment and condition while the cloudiness gently disappears. This is slower than other breweries and it results in a slow produced beer that is wonderfully full of flavour from our fermentation stage.
