BRY-97?

Post by jason.loxton » Mon Sep 09, 2013 1:55 pm

Anyone have any thoughts on this yeast? Isn't much available on the Internet. people seem to suggest it is close to 1272. (I just pitched a split batch of an American Wheat along with S-05, so I'll chime in in a couple of weeks with an opinion.)

I use it pretty regularly. On 10 gallon American ales now I've taken to hitting one carboy with BRY-97 and one with US-05. I used to use 1272 very frequently, but have less time to harvest yeast these days, so dry yeast is much more economical for me. It's incredibly close to 1272, but I find that with a generous pitch it ferments much faster than 1272 usually does.

I used it in my hopslam clone and 2 packs brought down a 1.098 beer to 1.014 :spilly:
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Interesting. I look forward to tasting the results then. I found the lack of comparative reviews on the Internet sort of odd, but I guess it is a pretty new product.

I find that it also drops clear a lot faster than US-05, similar to 1272 vs. 1056.
