Hello
Hello, I’m in the Nova Scotian Valley. The Port Pub would be my local. I’ve been doing BIAB for the past 6 months, IPA’s getting hoppier and hoppier, and now more and more “imperialised”. Have been experimenting with things like fermenting in the brew kettle, non-insulated BIAB mash, and real ale simulation. I developed these techniques with discussions on BIABrewer.info. I have fanatically tried all the hopping techniques, and have invented?/explored “overnight mash hopping”.
My best beer so far was an 8% FWH only Styrian Goldings/MO SMaSH with 1lb hops, it has amazing flavour. Next one planned is a StyrianGoldings 8oz mash hop (tried that before by itself- big flavour) combined with a 5 min addition of 8oz cascade at 9% ABV and 1lb crystal 80 with the MO. Expensive hop bill but delicious. Actually OBK has the Styrian Goldings for $9.99 per lb.
I wanted to join this local group because I would like eventually to enter competitions. I also noticed a few experts on here that I recognised form other sites. I posted enthusiastically on other forums, but less so these days now the nice weather is here (the winters get a bit boring and long) Oh and thanks Jimmy/Becky for the great BIAB bags.

Re: Hello

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.
