Infection?
Hey all,
I need some advice. I started this Cream festabrew kit on Monday and the krausen didn't drop like I'm used to. Its been this high for 3 days out of the 5 and didn't rise till the 3rd day.
The yeast was safale dry yeast which I activated like normal. Followed my normal routine in cleaning which is very ocd. I have read that some creams will hold this krausen for a long while. Some recommend rocking it. Some say to let it fall. Others to racking from under it.
Is this infected or normal? Temp was a nice 18-22 through the first 3 days. Advice is welcomed.

Re: Infection?
Yes I know it is. I just find it odd that it hasn't dropped and has thick colonies on it. 5 days seems like awhile for it is all. I wasn't sure if something went wrong, infection, stall...

Maybe it's just this style. The krausen has a massive colony on the back that I cannot get a shot of. Looks like open fermentation with the krausen hardening.

Re: Infection?
I've had a krausen drop and come back again just as heavy with two different ale yeasts. So you're fine with just one.

At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

Bottle it up and send it to me for analysis!
It's fine. Enjoy. the great thing about carboys is you can see in, the bad thing is that you can see in.

I sometimes forget that I need to RDWHAHB. You're right Sandy... catch 22, my kids love watching the yeast go ape haha.
Love this community, thanks all. I'm used to the kits being one shot wonders with krausen. Racking my IPA and made made he mistake of looking at my Cream.
Cheers all. Thanks.

Yeah caught me off guard. Thing is still there too, hasn't dropped or gone up. I don't normally do primary only as I add a lot of changes in secondary. This may be my first heh

Re: Infection?
Basically my personal rule is this:
If it looks weird but tastes good - keg and drink as per normal.
If it looks weird and tastes weird - bottle and wait for a couple of months.
If after a couple of months it still tastes weird - wait longer
Subsequently I have many beer in the basement that I'm weary of, but I continuously try ever once in a while!
