Brewing a best bitter
"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

MY friend liked my Imperial Stout and I offered to make a brew with her so I'm tweaking my last recipe. Probably brewing this up Monday.

Re: What's everyone making this weekend?
Brewed up a batch of Centennial Blonde on Friday. Have a whole whack of C hops, so a hoppy pale our a session IPA may be next. Have to brew for a bachelor party full of swill lovers, so some Festa kits may be on the block too (not that they are swill, just more palatable than a hop bomb for these guys).

I thought pix of your own beer were required to be in a Brewnoser glass!Jimmy wrote:Have a Tall Poppy IRA clone mashing and drinking my latest IPA
I just kegged another English bitter - I can't decide wither to call it a "Best Bitter" or an "ESB" because it's intentionally ESB bitterness at BB alcohol content - and my first attempt at a White IPA. I started with a clone recipe for Lagunita Little Sumpin' Sumpin', but then I didn't have most of the right ingredients, so winged it. Went with way too much flaked wheat because I was out of wheat malt - then found another container of wheat malt after I finished brewing! But I nailed my numbers, and even dead flat it's tasting great.
Currently on tap: Whiter Shade of Pale!

I'm making a DIPA later this week and put on a starter for it today using San Diego Super Yeast. I haven't brewed with it before but apparently it ferments out super quick.

Very quick. I've seen it finish a 7% IPA in 3 days. Pretty crazy yeast.canuck wrote:I'm making a DIPA later this week and put on a starter for it today using San Diego Super Yeast. I haven't brewed with it before but apparently it ferments out super quick.

Doing up a farmhouse ale tomorrow. Just can't decide on the Springtime in Amarillo recipe or this other honey and orange (peel) recipe. Learning towards the honey-orange.

Re: What's everyone making this weekend?
If you're doing a Farmhouse Ale, I'd suggest the Springtime in Amarillo recipe for something more authentic. The other sounds more like a a Wit or something similar. What are you using for yeast?

Danstar Belle Saison. And for the record, the Springtime in Amarillo calls for Turbinado suagr, which I don't have. Brown sugar substitute?jeffsmith wrote:If you're doing a Farmhouse Ale, I'd suggest the Springtime in Amarillo recipe for something more authentic. Re: What's everyone making this weekend?
I'd say definitely go with the Springtime in Amarillo recipe. That yeast should give you lots of fruitiness and peppery notes that might conflict with honey and/or orange peel.

Re: What's everyone making this weekend?
Brewing an AIPA and a light ale on Monday. Slowly using up my Amarillo and Centennial hops. US-05 for the AIPA and WLP060 Am Ale Blend for the light ale. I used WLP080 Cream Ale Blend for the light ale a few weeks ago and it was quite good. Took 2 weeks for the sulphur taste to go away.
