Hi,
I'm a new member & only been brewing for a few months. I'm on my 8th batch (did pretty ok on the first few try). But i'm a bit confused on this one.
I'm doing a DoppelBock and had my beer in the primary for 8 days - I had a Pilsner lager liquid Yeast (WLP001) à 21.5 °C but it only started fermenting 24 hrs later and it stop bubbling after 6 days... Since I never take a FG reading before transfering, I took a reading only after and the gravity was 1.046 (It had an original gravity of 1.071)...
Doesn't look for much alcool content! Should that stage have lasted longer? Should I ferment my Bock again?

First off, wlp001 is not a lager yeast, it's an ale yeast. 21.5C is a bit on the high side too, definitely not a lager. At 1.046, that will be pretty undrinkable. Maybe your yeast needed a starter before pitching into a beer that big. You will probably need to make a small starter and repitch.

Be sure the yeast is actively fermenting when you dump it in or it won't work.

If you fermented it at 21f, you might as well use an ale yeast, - 05 would be my choice.
