Mexican Cervesa Recipe?

Post by sleepyjamie » Fri Dec 07, 2012 11:16 am

I am wanting to brew a beer in memory of a friend who passed away. I didn't see anything in the BJCP for this style and I guess it would be a light lager http://www.bjcp.org/styles04/Category1.php#style1A" onclick="window.open(this.href);return false;.

Probably thinking the following:

70% pale
30% flaked corn
carapils?

not sure what how to use. maybe amarillo @ 60min

anyone have any decent recipies i could use as a guide?
On Tap:
Falconers Galaxy IPA
Simcoe SMaSH
Topaz SMaSH
Cranberry Rye Saison
Monde Souterrain (Dark Saison)

use lots of six row for the pale malt, and no carapils
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

This guys info is solid and he has some recipes as well. I'm going to be doing one soon as well.

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.
