US 05 under pressure
Thinking on banging out a double batch of a hoppy wheat ale on Friday. I have a brick of us05 I'm gonna break into. I have fermented us05 under pressure at 18-20c a handful of times with great success. To save myself a little chilling time , I'd like to push it and ferment it a little warmer. Just wondering if anyone has fermented warm with this yeast under pressure ?

Bump for interest! Did you ferment at 15 psi or lower?

I don't stray past 10 psi. Every yeast reacts differently, 10psi is safe and suppresses any unwanted esters at higher Temps. I pushed US05 TO 23C with no ill effects. I'm sure you are aware, but any yeast driven beers will suffer from pressure fermentation. Leave the spunding valve open until at least 3-4 days for Belgians or english styles in order to get your esters.

I've finished diacetyl rest at 23 C and 22 psi before cold crashing to settle the keg serving pressure to 12.5 psi at 4 C. During anaerobic ferment (after dry pitch 36 hours) I'll run at 8 psi.
