I have enough cheese already smoked to last me a few weeks, but it clearly looks a lot better for smoking cheese than my bullet smoker.
Thinking about getting the ingredients to make a couple Gouda .

lol yeah I enjoy ribs. There were seven of us and we put a good dent in it. I do the 3-2-1 rib method and they always come out perfect.

$475 CDN all in with a bunch of accessories (extra fish grate, rib hooks, cold smoke plate, cover etc) shipped to Calais including HST at the border. CM was kind enough to pick it up for me (huge kudos) since he was heading that way anyways, well actually he picked up two, one for himself too. It's sweet, heavy duty commercial grade unit, 100% stainless, 250 watts. Plus I can bear hug it and go anywhere whenever the need arises. Looks solid. It's gotta be 250 watts. 2500W would carbonize your ribs.

Damn you guys and your delicious looking hobbies. Although I can't eat red meat or pork, it looks like a delicious way to prepare fish, chicken, and veggies. With the money I'm saving from doing the grain orders, I'm thinking it's time to jump on the smoking train.

Yes. Read the reviews about building a shelter around them so it'll hold the heat on a breezy day. Also the proprietary wood pucks cost a small fortune compared to actual wood, then there are the reviews online that discuss the puck-feed jamming. I had a job to control the temps on Wednesday due to the wind and cold, but I got er done.

I'm using the Bradley and have not had an issue yet. I put a brick in the bottom to help keep temps up. So far so good.
