December 2019 Exchange - Dec 19 - Get Schwarzy
I've been wanting to brew one of these for a while, this year I was able to get organized early enough to allow for the lager schedule.

Style: 8b Schwarzbier

The ABV is likely a higher than I measure. My FG was about 7 points high, and it was quite sweet when I bottled. I underprimed for that reason, and after trying a bottle and talking to Glen (@oceanic_brew), I believe I got the result I wanted as it seemed to have a high carb, and wasn't as sweet.
I'm not exactly sure why it was underattenuated, I had a pretty massive starter (400billion or more), and I fermented at ~14C (with a rest of 16.5).
I did have a few oopsies. My mash temp was a bit high (only had an IR thermometer at hand for this brew). I probably didn't oxygenate enough. It's also likely that I did the diacetyl rest a little early, so when I started dropping the temp after the rest, it may not have reached the target FG yet.
Despite this, I am pretty happy with the result. It is probably skirting the lines between schwarzbier and a Porter though.

Great one, really balanced. When I opened the bottle it started foaming over and there was some yeast cake that came with the pour. But it still poured well on the first try. Even with the yeast it was still delicious!

My first thought about this one is that it’s not nearly as dry and thin as the (few) other schwarzbiers I’ve tried. Definitely not a bad thing, and puts me somewhat in the mind of Church Brewing’s German Porter, which I love. Nice level of roastiness that’s balanced nicely by the residual sweetness. I was not overly excited for this because it's not really my fave style - when I'm drinking darker beers it's usually a higher ABV RIS, imperial porter or a dopplebock - but this was friggin' delicious. One the best schwarzbier's I've had... I couldn't think of a thing I would change.
