What is your favourite hop, and why?
I'll start! Keep in mind I've only been brewing for a month, but so far my favourite hop is Amirillo. I love the orange and tropical aromas! I also very much enjoy Citra!

Cascade/Mosaic - So versatile and super damn tasty. Never go wrong with either of these.

Citra, but Simcoe is growing strongly on me. Makes a really nice IPA hop.

El dorado. It’s not as pungent as some of the other new school hops but if you layer in enough of it, it tastes like candy. Very bright and clear tasting. Which is perfect for pale ales because I like them on the bitter side of the style. It’s weakness is that it gets hidden behind hops like citra so when I blend it with others I will usually go with a 2:1 or 3:1 ratio.

Zythos is another great one, with a great Citrus and Grapefruit flavor and smell.
Then you still have all the basic but greats such as: Citra, Simcoe, Amarillo, Cascade, Chinook, Falconers Flight.
All of these hops are great for IPA's and I usually use them with Pale Ales too, to help give it a bit of a citrus or fruity kick.

Challenger is my pick. Spicy, fruity and really drinkable all purpose hop. Especially in bitters and anything British. But my choice is to blend hops. Fuggles and EKG pair really well together.
Primary - Best Bitter
Secondary - Standard Bitter
On tap - Golden Ale, Standard Bitter, Blonde, Best Bitter, Premium Bitter, Porter

Idaho 7 holds a special place in my heart personally. The first time we used it in a pale ale, it was a total eye opener.

I will always have a place in my heart for Fuggles. I love english beers, and I love fuggles. I grow them, I make SMASH beers with them, I use them in probably half of the recipes I've written to date. They're not for the DIPA crowd, unless you want to unless barrels of them...but they're a great balancing hop. Typically with a slightly earthy or mild spiciness to them, they can surprise you with how well they glue a beer together.

Hallertauer. I make mostly Kolsch, Blonde Ales and Lagers.I like the taste of Hallertauer, but a good balance between the malt and hops is essential. I dry hopped once and that didn't turn out at all.

Willamette for me. Clean, subtle. I use them in almost everything.

In terms of American hops, its a tough decision but I'd go with Amarillo. I love what it adds to pretty much all of my IPA recipes.
Continental hops, Saaz is a longtime favourite.
