As someone in the peanut gallery, have they offered/given the shelburne water profile, so that you know what their water is, and could match it accordingly?
And you are definitely not restricted to you own tap water: Hop Springs Eternal, which took home bronze and a brew on their system last year, was brewed using very hard spring water. I don't remember 100%, but I imagine they adjusted the water for that brew. ¯\_(ツ)_/¯

Also from the peanut gallery... there's a very large gypsum mine here in Nova Scotia. Surely you would be able to add that to your recipe and still be able to consider your water to be "local".
