Using Propeller Hefeweizen yeast
Hello all,
I was wondering if anyone has some experience using the Hefeweizen yeast from Propeller bottles. The reading I have done online is very general. I really enjoy Propeller's hef. Does anyone have any experience collecting it for a starter or any hints on how to make sure I collect enough and ferment it correctly?

it's wyeast 3068 Weinstephan, you can buy it through Noble Grape although you may have to order it in. Some of the guys here might have some of it on the go now, or have some in the yeast bank

I live in Antigonish and don't get into Halifax much. I figured I was buying the Propeller anyway so why not collect the yeast to use instead of making a trip into Halifax or ordering it online. The free'r the better. I am only brewing extracts as of yet and having success so far but I wanted to get away from the Cooper's yeast and try something else.

The Weizen is filtered and then re-injected with yeast before packaging and I'm uncertain if they inject the same strain or a different one, you may end up with something completely different than what you want, just sayin'.weatherston wrote:I live in Antigonish and don't get into Halifax much. Also, other homebrew shops can order in yeast too, might be worth asking. Anyways you could carefully decant the beer from a bottle, refill it 1/2 way with a 1.035 wort and attach an airlock (use aseptic techniques) then work that up from there to see what you end up with.

At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter.

NG on Lacewood has it in stock right now. I love this yeast.

Thanks for all the advice.
I may take advantage of the supply line down the road.
This weekend I am going to buy myself a case of the Propeller and while drinking the beer brew up a wort to pour into the bottles and airlock it.
I will let you all know how it turns out.
