Pig In A Day

Sunday, Nov 27.



with Chris Velden and Rupert Jannasch, in the Packing Shed at Ironwood Farm, 5184 Hwy 215, Summerville, Hants County. Includes a pork loin lunch.



The day starts at 11 am, with Chris showing us how he takes a pig apart and then how he makes sausage, salami, and prosciutto. You will be able to pre-order small quantities of these products and will get delivery once they are ready in 3-7 months!



It could be chilly in the packing house so this may take a bit of stamina or some warm clothing!

Wonder if they serve or we can bring beer. Maybe do a trade: beer for sausages.
How well do you know this crowd, Kegger? Would that be a reasonable suggestion?

I don't know them at all. They don't know me either. Wanna show up drunk and eat all the pork chops?

Take notes, maybe this is a project we could take on one weekend. I have a meat grinder that could make short work of a big pig!
Now we need a pig. Long pig? Heh

I'm going to try and pencil this in... sounds awesome... I also have a meat grinder and made lots of sausage in the past but have been a bit hesitant to break out the nitrates and take the pluge into curing my own meats... learning how to make salami and prosciutto would be the bomb though... :bbq:

Damn, working. Looks like that could be a fun day.
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:
