I thought I was way behind the curve on brewing and bottling my advent beer. Going to be bottling and kegging mine this evening. Ended up super dry at 1.001. The Wallonian Saison yeast from the Yeast Bay is super aggressive.

I tasted my Wheat Porter last night again that's been about 2 weeks in the primary. Yeast was an expired vial of WLP002 stepped up to a 1.5L starter. Fermentation got a little...warm, and took my OG 1.072 down to 1.012 or so. I figure I'm doing everyone a favor: you can taste it and if you like it drink it, otherwise you might be able to burn it for warmth.

Waking up and getting excited to make my English IPA I've been researching and designing. I think this one is going to be Guinges' Tipple. :mmm: I haven't had a house beer for about a year now as I've been making a new beer each time (Sagitarius). Not sure whether to call it "Birtannia" or just "Brit."

I'm still trying to achieve the colour of the beer below, this time I'm using some Munich11 and Carastan.

Just finished milling my grain for my dipa and apa. Arm got a good workout haha. Looking forward to tomorrow's beer day. Keg big spruce wheat, bottle nut brown and Brewing a dipa and apa. Going to get up semi early to bottle and keg before the kids get home.

Big spruce 6d has been kegged, nut brown bottled for the beer exchange, hoppily ever after dipa brewed added Vermont and us05 yeast, and house apa brewed and put the funktown yeast to use. Long ass beer day. But got it done. Will be able to take next weekend off.

Brewed my Britannia English IPA today and taught an airline pilot how to brew at the same time. He flew off back home just after lunch when the brew was done. Another fledgling brewer. :lol:

Was a busy day and I'm looking forward to having 2 weeks off Brewing. I'll be bottling the big spruce and getting a couple beers ready to brew. With my current line up, I'm probably going to attempt an IPA and bohemian pilsner .

Finished bottling my advent calendar beer (I blew the first keg when I was bottling and had to carb the 2nd to finish), and filled a few bottles for the Big Spruce comp.

I will say that I'm excited to get some hops back in the lines in the near future :lol:

Hey jon, did you just use a culture for the first oud bruin? Read the BCS recipe and they suggested fermenting on an ale yeast before the bugs but I love sour stuff

I followed the BCS suggestion and fermented the first oud bruin with US-05 for 4 days before I racked it to a carboy and added the roselare blend. I am pretty happy with how that turned out, sour enough (but could maybe use a bit more) but I am going to try it without any new US-05 this time and I am hoping it is mostly bugs in this "cake", looks different from a normal yeast cake.

Yea I couldn't make it in to SW either. So I did the next best thing since I was hauling furniture from the valley. Picked up and killed a Growler of Boxcutter IPA. Really friggin tasty, but I was full (with a good buzz) after half a growler. :cheers2:

Brewed up 10 batch of mandarina bravaira ale. ..this is going to be a hop bomb...12oz of hops in the kettle...4oz for dry hop (2oz each carboy)...
ibu is 41 ...mostly late hops

Smelled great...cant wait to tap this one

Im hoping to make the orbit pale ale next weekend

Bought 2 Brewhouse Lager kits at Costco in Peterborough for $19.97 each. Price was right, the beer is lame in homebrew standards. This time of year I can brew them in the basement with no temp control. More beer is a good thing.

A friend sells the Brewhouse kits and I make them for him and myself all the time. Hack them and you can get a much better product.

Boil some with hops, add steeped malts and definatly change out the yeast.

Brewed up a Gratzer (95% oak smoked malt wheat beer) with Chalmers, Boogie, and XmonikerX. We split 2 double batches so we can use 4 different yeasts (US-05, MJ Bravarian Lager, Lalvin 71B-1122, and jharvested Jolly Pumpkin sour dregs). Starting gravity is 1.030, this should be an interesting exbeermiment :cheers2:
