Probably is the age of the previous batch to the new batch. However which was better? New or old?Jimmy wrote:Mike and I kegged the most recent batch of this last night. It definitely turned out very similar to the previous batch. Side-by-side you can taste a difference, but I'm not sure I'd be able to if it wasn't a side-by-side comparison.

Can't really say one is better than the other - they were almost identical, but one tastes a tiny bit different than the other. It could be the fact that I used Superior Pale Ale malt on the new one, and standard 2 row on the previous.

That's the slight difference right there.

Re: Berlintermites - Beliner Weisse
Or it could be the difference in pH, or different bugs on the malt, etc. From what I've read, the results can vary quite a bit from malt to malt (when using it as a source of lacto). I'll continue following this process to see how consistent it actually is. So far, so good.Keith wrote:That's the slight difference right there.

HAHA. Just did now........ I thought you used 2 row as the base malt for some reason when we were talking. But it was used only as the lacto starter. So yea just use it for the lacto starter and ignore anything else I say.

I'm gonna give this a run and trust in the 24 hours of souring as my pH meter is a eBay piece of shite

Scratch that. I just bought one of the Omega meters like Jimmy's. Buy once, cry once (except this is the second time I buy one)jtmwhyte wrote:I'm gonna give this a run and trust in the 24 hours of souring as my pH meter is a eBay piece of shite

Good stuff. There's still a chance that I may submit this beer as my advent beer. I've got 1.5 kegs of it still kicking around.

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

I don't think many people are going to want the spiced stout..it's pretty damn spicy! I took it to the last meeting to gauge the spice factor, and it failed the test.LiverDance wrote:fuck that, i want the spiced stout! Don't be passing off your hand me downs!Jimmy wrote:Good stuff. Re: 2015 Advent - December 5A: Berlintermites - Beliner Weis
Just tried my bottle of this, and as I suspected, it's undercarbed.
I Went away unexpectedly for work, and hooked the CO2 up @ 17 psi in the basement while I was gone. I was hoping that would be enough, but it definitely needs a lot more carbonation. Sorry fellas!

I found the carbonation on the stout great. LolJimmy wrote:Just tried my bottle of this, and as I suspected, it's undercarbed.

Delicious beer. A bit undercarbed, but still fine. Nice lemony clean lactic sourness. None of that off character that I get in some sour beers. Thanks!

Ordinarily I'm not a fan of the style (Unfiltered's is really the first one I ever enjoyed). I couldn't pick up too much with this one other than it totally reminded me of champagne.

Excellent beer Jimmy. I shared it with a friend as we were out for supper and he lit up and said "Wow" when he tried it.

Very nice beer Jimmy. Great refresher and like Adam says none of the dreaded sour mash off flavours. Thanks!
