Can't really say one is better than the other - they were almost identical, but one tastes a tiny bit different than the other. It could be the fact that I used Superior Pale Ale malt on the new one, and standard 2 row on the previous.

Or it could be the difference in pH, or different bugs on the malt, etc. From what I've read, the results can vary quite a bit from malt to malt (when using it as a source of lacto). I'll continue following this process to see how consistent it actually is. So far, so good.

HAHA. Just did now........ I thought you used 2 row as the base malt for some reason when we were talking. But it was used only as the lacto starter. So yea just use it for the lacto starter and ignore anything else I say.

I'm gonna give this a run and trust in the 24 hours of souring as my pH meter is a eBay piece of shite

I don't think many people are going to want the spiced stout..it's pretty damn spicy! I took it to the last meeting to gauge the spice factor, and it failed the test. :lol:

Just tried my bottle of this, and as I suspected, it's undercarbed.

I Went away unexpectedly for work, and hooked the CO2 up @ 17 psi in the basement while I was gone. I was hoping that would be enough, but it definitely needs a lot more carbonation. Sorry fellas!

Delicious beer. A bit undercarbed, but still fine. Nice lemony clean lactic sourness. None of that off character that I get in some sour beers. Thanks!

Ordinarily I'm not a fan of the style (Unfiltered's is really the first one I ever enjoyed). I couldn't pick up too much with this one other than it totally reminded me of champagne.
