Are you using a stone for this Jimmy? Or just jamming an air line in the vessel and pumping CO2 in?

I'm not running a stone for this - I hook it up to the bottom port on the conical and slowly bubble it up through. I could use the stone, but haven't found it's required.

My guess would be a couple of minutes. Similar to oxygenating wort.

I do a couple of minutes at a fairly slow flow. I use a blowoff tube going into a jug of starsan as my gauge for flow rate.

I started...mashed at 150f for 90min...cooled down to 115f (didn't bother raising to 180f...the grains I added would be dirty as fack).
Put in carboy with .5lb acid malt and .5lb of 2row. Pumped co2 in for a few min.
That's when I pushed to dam hard o the bung (thermowell) and it shot straight into the carboy....I'll have to fish it out tomorrow.

Wrapped the carboy with ferm wrap and set my stc to 46c.

Do you have a pH meter, or do you plan on going by taste/time?

Good stuff. The past two batches both took ~24 hours to reach 3.25-3.30.

Sounds about right to me! It's a weird smell - hard to describe..but I'd say mine smell lemony, slightly vegetable like, and sour.

Sounds good to me. You're welcome to try mine as well - I've got a partial keg on the go right now, and have another batch that should be kegged at some point next week. I've been tasting the one that is fermenting right now, and it seems as though it's going to taste pretty much spot on with the one I currently have on tap.

Not sure if this turned out...I've only ever had 2 sours...big spruce and Nash. The sour seems a little weird...could be the hops tho...I give it a few days on the gas to settle down.

I also think my Bo pils is too fruity due to s23 yeast...don't know why I use that

Mike and I kegged the most recent batch of this last night. It definitely turned out very similar to the previous batch. Side-by-side you can taste a difference, but I'm not sure I'd be able to if it wasn't a side-by-side comparison.
