2016 exchange/December 8th. Canneberge et de Cerise

Canneberge et de Cerise
Style 23F Fruit Lambic

1.047 og
23 Ibu
I didn't account for the sugars in the fruit...so I don't have a final abv...so I'm going to say 5.5%.

44.5% Pilsner Malt
44.5% Wheat Malt
11.0% Munich Malt
Mash @ 145f for 120min (mash adjusted to 5.3pH with lactic acid).
Mash out @ 168f

60min boil.
13 ibu of Tettnag @ fwh
10 ibu of Cascade @ 15min.

Ferment with US05.
Once fermentation slows (3-4 days) pitch wyeast 3278 (Belgian Lambic Blend) & add 3kg of frozen cranberries.

After a 6 weeks, rack beer into a clean carboy with 3kg of frozen dark cherries. Add a vial of wlp645 (brett C).

After 6 weeks bottle (ensure gravity is stable and below 1.008).

I used 2 cooper sugar tabs for each 500ml.

I'm really digging this beer. The fruit is present but not overpowering. They balance the Brett. character very well. Although the sourness level could be a bit higher, the present levels are definitely ok. Good job. You also avoided that dreaded mousey THP http://www.milkthefunk.com/wiki/Tetrahydropyridine character that I have got in my lambic style homebrews.

Yea the sourness level (lacto) was held back a little (by design) from the amount of hops in the kettle . I was hoping the tart cranberries would pick up the slack a little.
Little sour...little funk. I have 6 bottles parked now...I'll see what happens after a year.

How was the carb level.? I haven't opened mine yet

I'd say about medium carb. Not heavy like commercial lambics, but enough for good drinkability. This way there is still room for more carb for those that age longer.

Awesome thanks. There should be enuf sugar in there for the brett to continue to change this beer over the next year

This was a delightful beer. You mentioned you held back a bit on the sourness and I thought it was perfect. Carb level was good.

I knew that using that amount of hops would hinder the lacto development. At the same time wants some Ibu to balance. I figured cranberry would help tart this up.

I don't have a lot of experience with this style but I know what I like. I like this. Not overly sour and the fruit is there but not overdone. There is a background flavour that I assume is the brett, as I can't describe it. Thank you for sharing.

This was a very enjoyable beer. Fruit and brett were subtle. Mark and I shared our first one and we're going to sit the second bottle for 6 months or so and see how it develops over time (the benefits of both participating in the exchange). Looking forward to trying this recipe ourselves. Thanks for sharing.

First time trying this style. I was not fond of the nose, however the taste was nice. I do not think it would be something I would go out of my way for, but glad I had a chance to try it. Thanks!

Really enjoying this one. Complex and unique but still drinkable. Wish I had more to store and try in a year from now. Well done!

we had it in august...on the 1 year mark since brewing..it was very nice.

I have 3 bottles left...hoping to taste on year 2 and 3
