Re: 2015 Advent - December 5A: Berlintermites - Beliner Weis
My sour that I brewed using the lacto pills turned out weird. It was plenty sour...but the sour flavor cut through every other characteristic that the beer was supposed to have. I added no hops at all except for the 8oz of mosaic and citra dryhop...and there was zero aroma...just a sour smell (not a bad smell however). I also added 1lb of cherries and a 1lb of mango to the keg...and there is absolutely zero flavor addition from that...and its been sitting with the fruit for almost a month now. The color is awesome though lol.
I went through the Milk the Funk wiki to see if i could nail down why it is the way it is...but can't really figure it out. It's not unpleasant by any means...so I don't think its a sour gone bad. Best I can figure is maybe the fact that I didn't boil the wort (maintained 180F for 15 min before chilling to souring temp) and that the bacteria is still active. It also gives off gas like I've never witnessed before. That keg sat in my cold storage after purging for a few days and when I pulled the pressure release pin on it...it blew like it had been sitting at 40psi for a few days!

I'm drinking the advent version. Very nice and light. Tons of raspberry on the nose, a bit less in the flavour. The sourness level is spot on. Good job!

I found the raspberry a bit too much - masked the underlying beer significantly. It seemed halfway between a Berliner weisse and a raspberry cordial.

Having this one right now. I like the raspberry, as I like a fruit beer to taste like the fruit. Not overly sour either. My wife likes this one too.

Surprisingly nice (to me). Less sour than I expected with the fruit adding some sweetness.

I think I found a style of beer I don't like.
No flaws that I could see but man I had trouble finsishing this one.

Loved the depth of raspberry flavour in this beer. Excellent balance of fruit and sour. Thanks for sharing!

That was really good, first sip I thought the raspberries were a bit much, but at sip 2 I thought it was great

Great sour jimmy. Wonderful color and nice flavor from the raspberries, nice apparent sourness. Thanks

Tasty stuff
Thanks Jimmy

"Twenty years ago — a time, by the way, that hops such as Simcoe and Citra were already being developed, but weren’t about to find immediate popularity — there wasn’t a brewer on earth who would have gone to the annual Hop Growers of American convention and said, “I’m going to have a beer that we make 4,000 barrels of, one time a year. It flies off the shelf at damn near $20 a six-pack, and you know what it smells like? It smells like your cat ate your weed and then pissed in the Christmas tree.” - Bell’s Brewery Director of Operations John Mallet on the scent of their popular Hopslam.

Just reading through this old thread - and I don't see any mention if a sparge?
Do I collect a full volume (for a 10g batch) for souring?

My MLT won't hold a full volume needed for 10g - do you see any harm in a batch sparge?
I could do BIAB style in my kettle - and if so, what volume do you mash with at full volume? I need to collect approx 11.5 g
