I make apple wine at 7% and 14%, and an apple/pear at 10%. My method is a bit different since we run two 150 L stills and can use any and all of the "waste".
My process involves shredding all of the raw material into a tank, no pressing. Yeast, enzymes (to deal with the proteins) and sweetness is added to bring it to the desired gravity. During the initial fermentation, the pulp will float to the top, so I draw off the bottom, add bentonite to clear and let her go the rest of the way. Decant a couple of times, cold crash, sulphur, filter and we're done.
The pulp gets collected, barreled to finish fermentation and distilled into an apple schnaps.
By the way, anyone interested in distilling? Will start around the first of December, got about 3 weeks worth of mash/wine to distill. If you are interested, bring your shorts and tank tops, it's a bit warm and humid in the still house.

So I kegged mine on Thursday and added a can of frozen apple concentrate. Probably could have done without the frozen stuff as it was very sweet, but people seemed to like it. I prefer it over commercial stuff, so I am pretty happy with it. Will probably make more soon.

I'm going to make some next year. Haven't made cider for quite a while.

Im making a apple peach honey cider tonight.

1gal peach/mango juice
2.5lbs of dark brown sugar
1/8 cup of lime juice
yeast nutrient
Notty Yeast
OG 1.065
my plan is to add a few pounds of frozen peaches in the secondary
I'll add 1lb of honey before kegging
