2022 Honey for mead

As per last year's post on this topic, once again I have access to raw honey (from a local Nova Scotia honey producer) that has small amounts of beeswax and water mixed in with it. He can't sell it because it has the water in it; average sugar content is about 75 to 80 BRIX, so is almost pure honey. I get it in 5-gallon buckets, and one bucket makes about three carboys of mead. If you are interested in a 5-gallon bucket please let me know.

I get this for free so will pass it along to anyone interested, for the price of a 5-gallon bucket with lid ($21.00). I'll set up a delivery schedule once I see how many folks are in. I'll be picking up the honey on Thursday, 10 Nov 2022.

For those who got some last year, how did it turn out?

Looking forward to seeing some new mead makers this year.

I would take some! Mine from last year are still in carboys, but doing well. One is a straight mead (around 14%, dry), and the other is a cyser (mixed with the cloudy pressed apple juice you can get in grocery stores). The cyser didn't reach dryness, and is at about 1.030 SG (around 12-14% abv). I will likely bottle it as a dessert mead, and may add a bit of cinnamon bark to add to the dessert-like apple qualities. Excited to see how it turns out!

I blended some of last year's with a funky saison to make a braggot that's about to be bottled. I think I'm going to blend some more with a wine to make a pyment soon. The rest will get bottled as a straight mead and a small melomel experiment or two this winter.

I'd certainly make more, but would like to give others on the board a chance first.

I would definitely take a bucket. I have some Bochet batch ageing in carboys from last year.

If not fully claimed I'd be interested to take some and experiment. One of the most memorable beers I've had recently is a braggot so I am inspired to try and dabble in the mead world a bit too.

Update: Last week I got five six-gallon buckets of honey-water. Today I picked up another six. The first five are spoken for by myself and a couple of newbie mead makers here in Chester. That leaves six available for the requesters on this post. Each bucket should yield close to three carboys of finished mead, so if you don't want that much mead please consider teaming up with a member on a bucket. Please let me know if you can. I'll arrange a drop off in HRM once I get a solid distribution list worked out. Please remember that I'll need $21.00 for each bucket w/lid.

Hi All, in an effort to keep this moving, I propose that since we have 6 buckets available, and 7 people wanting, that those who aren't already sharing or that don't mind, sacrifice a small amount of honey so that we have 7 buckets of a slightly lesser volume each. Maybe you lose a few gravity points on each batch, or whatever, but this way everyone gets some, and an outcome is arrived at. Does this make sense to people, or is it too much work for the organizer? Post with your thoughts below!

Or to free up @Tomead, one of us could also do this on our own, if we centralize the pickup/dropoff point (i.e. if Jim or Sue get 6 buckets dropped off at their house, they can just measure out ~3L from each bucket and add it to a new 7th bucket before everyone comes to pick up).

Am I making this too complicated or could this work for everyone?

One of my newbie mead makers can no longer participate, so I now have seven buckets available. It would be great for me if I could drop it all at one location and then one of the gracious HRM folks could sort out distribution to those who couldn't make it to the drop. Can we do this on Saturday, 26 Nov?

I can offer up my garage here in middle sackvegas. We have the brewnosers advent exchange in armdale that afternoon too and I could likely deliver a couple pails within the peninsula beforehand.
