Boil 2 hocks in water with 1 Tbs SALT
6 peppercorns
6 cloves garlic
1 parsley root
1 leek
1 carrot
1 bay leaf
cook for 1 to 1-1/2 hrs. then remove hocks to oil greased oven dish cut skin gently.
Mix 1 cup of beer wiht 1/4 cup of honey pour over hocks put in oven 200C or 400F
basting every 10 to 15 min. until hocks are crisp about 1 hr.
