3 lbs peeled potatoes cut in similar size pieces
1 lb unsalted butter, cubed (allow to warm)
1/2 Cup IPA or DIPA (allow to warm)
2/3 Cup warm milk (more or less, to preferred consistency)
salt and pepper to taste
NOTE* Add as much or as little milk as you like for consistency, from stiff mashed potatoes through to whipped potatoes or anywhere in-between.
Watch the video and be sure to add enough salt to bring the flavour out.
*For hopped potatoes that will have you salivating, use 1/4g LOW alpha acid hops per lb of mash. For this recipe that's ~ 1g total. Grind the hops into powder and mix in.
-Boil potatoes in salted water until cooked through and tender.
-Drain. Mash.
-SLOWLY begin mashing the butter in. A few cubes at a time.
-As the potatoes become loose enough, switch to a whisk.
-Whisk in remaining butter.
-Whisk in IPA.
-Whisk in warmed milk to further loosen to preferred consistency.
