[Fire roasting optional] :rockin:

Yield: ~ 3 quarts
Time: ~ 90 minutes

INGREDIENTS
14 roma tomatoes, halved or quartered
1 onion, diced
3 cloves garlic, crushed
1/4 cup extra-virgin olive oil
2 bay leaves
1 cup veggie stock
1 cup Brown Ale or Smoked Porter
4 sprigs thyme, leaves only
2 pints heavy whipping cream
Kosher salt and freshly ground black pepper
1 tsp crushed dried chilies to taste, for some KICK

Garnish:
2 basil leaves, chiffonade
Creme Fraiche
Grilled bread crouton
Grilled cheese crouton

DIRECTIONS
There's no reason to cut these veggies perfectly, it's all going to get pureed.

-Reserve 2 tbsp of olive oil for garnish.

-Halve tomatoes and toss in olive oil with onions, bay leaves, garlic, thyme, chilies, salt and pepper. Roast on a baking sheet @ ~ 400 F until cooked and beginning to brown and caramelize, 30 - 40 minutes.

-Smoke Option: Roast tomatoes in a Kamado or other wood/charcoal cooker with your choice of wood, I usually use oak or apple, sometimes both. Same deal; roast/smoke @ 400 F until beginning to brown and caramelize, 30 - 40 minutes. Longer for more smoke / char as desired.

-Remove and discard bay leaves. Add roasted veggies to pot with cream, beer and stock. Bring to a simmer for 15 minutes. Puree. Season to taste if necessary. Cut with more stock to loosen if too thick. Serve with garnish of olive oil, basil, crouton of choice and or creme fraiche :rockin:

A good puree should be silky smooth so strain through a sieve as needed. Blend only for a more rustic presentation.

My wife and I recreated this last night and we've both decided that it is one of the best soup recipes we have ever followed.

We followed the recipe exactly, but for some reason, ours turned out very light in colour almost a whitish pink.

Regardless, it's delicious and the bread is a must.

You can get that color effect from blending tomatoes with a machine.

The wife did try out her new hand blender rig... interesting that it would be the cause.

I use a blender on it. Whatever the colour I'm sure it's lovely

I am making this atm. Nice to See some recipes that dont need a smoker :)

If anyone else wants to make it, Roma's are on sale at Pete's til the 21st, 99ยข per pound. At least Bedford location but I think Dresden would be the same.

Also, is 2 pints whipping cream a typo for 2 cups, or am I really supposed to use a whole litre of whipping cream?

How'd it work out for you?

I just made some, smoked the tomatoes and used Balticus Smoked Porter instead of brown ale and served it with grilled cheese crouton - unreal. Edited teh op with more photos and the smoke option :cheers2:

it was fantastic. only had 500ml cream in there when i first ate it, as that's all i had. added some more cream when i reheated it the next day. the first time it was more tomato forward, second time more creamy (makes sense i suppose), but delicious both times.

the tomato and onion on the smoker look fantastic.

There you have it! I've made it with less cream before as well, makes for a more quaffable soup. It's the land of rich, elegant cream soup with the 1 L of cream.

I don't eat cream soup very often, but when I do, I want BEER in it!
