Okay here's my first attempt at hop sausage. These bad boys are effing bitter!!! Like 300+ IBUs real time, far far FAR more bitter than ANY beer. They are really good but you certainly won't taste anything else for a few hrs afterwards :lol: And if you're wondering, I called them 'Balls' because I rolled a bunch into meatballs and smoked them :)

I'll revise the recipe and repost as soon as I finish off the 6 lbs! :lol: :lol: 2nd attempt will have all the flavour and little, if any bitterness. Now who wants to help chew through this? :mmm:

Numbing Serotonin Inducing Hoptacular IBU Balls

6 lbs pork butt (ground)
1.25 cups beer (I used Erdinger in this batch)
7 cloves garlic minced
5 tsp sea salt
3 tbsp fresh sage finely chopped
2 tbsp fresh thyme finely chopped
8 g (5 tbsp) dried hop flowers (ground in food processor)
5 tsp fresh ground black pepper
4 tsp hot smoked paprika
1 tsp Chinese 5-spice
1 tbsp crushed dried chilies

Crazy. That bitter with only 8 grams of hops. You didn't do the self stuffing thing again did you? :lol: :lol: :lol:

It's odd, they don't taste offensive or bitter at all when you eat them. About 5 minutes later you realize your tongue is completely numb :lol:

Using hop oil was a thought but it'd likely be a little difficult to dose into less than 100 lbs or so of pork but now that I have some good pipettes it might be do-able. A low alpha hop might work better too but I'm not sure since they are full of beta acids that are bitter too, I'll probably give some a try sometime though. So I'm thinking about steeping a whack of hop flowers in beer at ~ 150F for 10 mins then using the beer in the recipe combined with maybe 1 tbsp of ground hops instead of 5.


Currently watching a hilarious B movie shot completely in Halifax called 'Hobo With a Shotgun' starring Rutger Hauer, lots of familiar sights but that's about the only thing making it worth the pain. IMDB rating of 7.9/10 with 600 reviews that I believe must have all came from the actors and their friends and family :lol: :lol:

Not nearly. It's been getting rave reviews ever since the Sundance Film festival. It's _meant_ to be a "B" movie, but it's getting "A" movie treatment. I went to a movie last weekend for the first time in years, but unfortunately couldn't get Marta to see Hobo.

Rave reviews alright. That was an awful waste of 1.5 hours of my life that I can never have back :lol: Time for more sausage!
