[All Grain]FunkTown APA

Well I've had enough people enjoy the beer and have asked me for the recipe, I think it's time that I share it.
This beer took Gold in the American Pale Ale (10A) during the 2015 Brownnoser's Competition. Hope those who brew this enjoy it. :cheers2:

Note: The below is for a 10 gallon batch.

Beer Stats
OG: 1.045
IBU: 32.4
Color: 6.5 SRM
ABV: 5%

Water Profile
Calcium: 84.20
Magnesium: 13.30
Sodium: 13.10
Sulfate: 199.20
Chloride: 47.60
Bicarbonate: 23.2
Additions to Pockwock Water
15g Gypsum
7.6g Epsom Salt
4.6g Calcium Chloride

Grain
14lbs Superior Pale Malt
2lbs CaraHell
1lb 8oz Crystal 30
12oz Cara-Pils
12oz Munich Malt Type 1
Mash Temp: 149F
Mash Duration: 60 min

Hop Schedule
1.2 oz Centennial (19.7 IBU) @ 60min
1.2oz Centennial (6.5IBU) @ 10 min
1oz Falconer's Flight (6.3IBU) @ 10 min
2.4oz Centennial @ Flame
1oz Falconer's flight @ Flame
2oz Centennial Dry Hopped 5 days
1oz Falconer's Flight Dry Hopped 5 days

Other
22 grams Yeast Safale US05 Dry (2 packs)
1 Whirlfloc Tablet @ 15 min
12oz Corn Sugar @ 5min

What is carahell and is there a good sub for it? I might give this a try sometime if there is.

Did a bunch of reading on this today. Although Carapils is considered by Weyermann to be a crystal/caramel malt in the 1.5 - 2.5L range, and though it appears as a sub for Crystal 10 on a lot of malt substitution charts, the prevailing wisdom is that it doesn't have the same sweetness that a Crystal 10 has. The other comment is that Carapils provides dextrins, and going with 10+% is likely to give you a higher FG (although not necessarily a sweeter taste because dextrins are tasteless). Still others claim that the long-chain sugars (that nothing but the depths of the human digestive system can break down) are the cause of beerfarts :D

I think the sub will probably work, but you stand to end up closer to what Keith gets if you sub Light Carastan or another true Crystal/Caramel 10 in place of the Carahell rather than Carapils.

Edit: Thanks for posting this BTW Keith! I suspect I'm going to put a batch of it on myself at some point in my next few brews, although I may have to sub some hops because I have like 10lbs in the freezer and none of them are FF. Any suggestions on that? I've got plenty of centennial, cascade, citra, columbus, willamette, amarillo and simcoe (and a few others, but they wouldn't be appropriate). Maybe I'll blend a bunch of those?

Per request from the man himself, here's the hop bill I used for my (5 gallon) version of Keith's Funktown.

8.5g Columbus (16%AA) @60min (20 IBU)
21.0g Amarillo (6.7%AA) @10min (6.8 IBU)
10.5g Simcoe (12.9%AA) @10min (6.6 IBU)
30g Amarillo @0min
20g Simcoe @0min
30g Amarillo Dry hop
20g Simcoe Dry hop

Dry hopping was done after 9 days of fermentation; just dumped them in and stirred. Kegged it about 21 days later with corn sugar.
