Centennial Pale Ale

Post by jtmwhyte » Fri Sep 13, 2013 9:18 am

I used Jeff's format to post this recipe. I've made it several times now and It's been great each time. It's also a good recipe to use while swapping hop types to get a feel for new flavours.

58.5% Canada Malting Superior Pale
24.4% Vienna
4.9% Carastan
9.8% CaraHell
2.4% White Wheat Malt

Hops will be all Centennial (10.9%):

1.25oz 60 min
0.75oz 30 min
0.5oz 15 min
0.5oz Flame out
Dry Hop 0.5oz for 7 days or in keg

Ferment with US-05/1056 or Notty and keep it around 20 degrees

Mash at 152ºF
OG 1.053
FG 1.011
7 SRM
42IBU
Nova Prime Taproom
Tap 1: Festa Brew Scotch Ale
Tap 2:
"Fill with mingled cream and amber,
I will drain that glass again.
Such hilarious visions clamber
Through the chamber of my brain -
Quaintest thoughts - queerist fancies
Come to life and fade away;
What care I how time advances?
I am drinking ale today." ~ Poe

I'll likely bump the IBU up to around 50-55 by upping the late additions slightly. I'm gonna brew this with Citra next time
