Dingemans Debittered Black Malt

Is this a carafa 3 special twin? If so, I could spot you some of that, might be Friday though...

I agree, the de-bittering comes from the de-husking (the carafa's have hd 70% of the husks removed) as the theory is that the astringency associated from dark malts originates mostly from the tannins in the husk (as I recall). And which one you sub depends on the roast you want. The Carafa Special II is 375-450°L and the Special III is 490 - 560°L.
