Hmmm... you have to wait 28 days for the yeast to settle. Why not just cold crash for a couple of weeks, and then bottle carb. The amount of yeast you're going to get just from carbing is super minimal, if you drop it nearly clear before bottling. Sierra Nevada, for example, bottle carbonates post-filtering (they add back in a measured quantity of yeast), and you'd never notice it.

I'd never heard of these before. Thanks for posting it. Looks like a good idea that has gotten a mediocre reception, due, mostly, to cost. If someone here buys them, I'd be interested to hear their review.
