It was the best piece of meat I have had in months. So eff'n good. The bacon-kraut was a bit much for me after all that chop, but then I completely cleaned my plate so I'll shut up. :)

Just a bit less of the slaw, and the addition of some morrocan spiced carrots, and it's perfected for me. Although I too jammed down the whole plate as it was, lol. I doubt there were any complaints... :mmm:
At Alexander Keith's we follow the recipes first developed by the great brewmaster to the absolute letter. :wtf:

Those chops are heaven on a plate!! I'll post that recipe up when I have some time. The beer-braised apple bacon kraut is pretty intense for sure! First time I made it, may try a different kraut recipe next time or for me it would have been epic on a bed of wilted greens - spinach, beet greens or swiss chard :cheers2:

Giant kudos to those of you that came out, great time! :cheers:

I expected to see a few more out and on the firkin, dumped ~ 10 L out this morning. Regardless, it's all good :cheers2:

The leftover chops are tomorrow nights special so get yer butts down for some meat you won't soon forget gentlemen!! :drool:

I just had another one and it was considerably better! I pan fried it on higher heat to crust it a bit and get the fat rendering = luscious. I asked the kitchen ladies yesterday to do just this but discovered later when I went in that they out-smarted me :lol: They run their flat-top at 350F which isn't hot enough to crust it up in less than 15 mins which was too long for them so they dropped my 'crust and render' instruction in favour of using a meat thermometer until it read ~ 150 F or so :lol: :lol: :lol:

We're running the last of them tomorrow evening and they will be rendered! :lol:
