Thanks for dropping of the rhizome! I guess we should have settled the spices $$$ while you were here, lol. I checked my pockets, and I'm pretty sure we didn't do it yesterday. Anyway, when you get around to it is fine, and have a good drive back, see you again soon. :cheers2:

Thanks for hosting, Tim! Had a blast. I saw the brewmobile pass me on Robie as I was waiting for brunch/picking up coffee. Hopefully the beer made it to PEI safe and sound.
Brewing right now: whatever is going on tap at Stillwell in a few weeks.

Who brought the pretzels to the 'fest? Have a recipe link to share? I tried making some yesterday, following some random recipe, but I had a number of issues with it. I really enjoyed the ones we had out there (and the spicy mustard they were served with :cheers2: )

Conditioning:
Kegged: barrel barleywine from 2014 - i think i still have this somewhere

cheers! :cheers2: the recipe i used had a tbsp of salt instead of a tsp... and used 1/4 cup of baking soda in the water, instead of 5 teaspoons... and didn't boil them as long... brushed with egg instead of just salted...

long story short they came out slightly undercooked, and tasted a bit too salty and kind of metallic or something from the baking soda. this recipe addresses all the issues I had with the other one, haha

I missed both the pretzels and spicy mustard .. will have to be more attentive next time .. I have a no knead bread recipe that translates into a pretzel recipe somewhere ... just have to find it!

dough
1 tbsp sugar
2 cup warm water
1 tbsp active dry yeast
2 tbsp butter
1 tsp salt
2 3/4 cups flour
boiling
3 tbsp baking soda in 10-12 cups water
topping
1 egg yolk
1 tbsp water
coarse salt

1. Mix the sugar and water and sprinkle the yeast on top. Leave 10 mins
2. melt the butter and salt in a saucepan
3. Mix the dough, yeast mix, and butter and knead for 5 mins
4. Put a bit of oil in a bowl and coat the dough, cover and leave for an hour
5. Bring about 3 inches of water to a boil a large pot. Add 3 tbps baking soda to the water.
6. Deflate dough. Divide into 6 to 12 pieces.
7. Roll each piece into an 18 inch rope
8. Form each rope into pretzel shape and immediately toss in water for 10 seconds. Use a slotted spoon to keep the pretzel submerged for the final 5 seconds.
9. Drain the pretzel and place on an oiled baking sheet - repeat 8 and 9 for each pretzel
10. whisk the egg yolk and brush onto each pretzel and sprinkle with coarse salt.
11. Bake 8-12 minutes at 475F

I would like to actually. after explaining things to them, my roommates were tryin to figure out if the movie theatre pretzel guys use lye.
