My Wyeast order landed today and I got 3 new ones I've never had before:
WYeast 1007 - German Ale - A true top cropping yeast with low ester formation and a broad temperature range. Fermentation at higher temperatures may produce mild fruitiness. This powdery strain results in yeast that remains in suspension post fermentation. Beers mature rapidly, even when cold fermentation is used. Low or no detectable diacetyl.
WYeast 1217PC - Weast Coast IPA - Private Collection Yeast -This workhorse strain is ideally suited to the production of west-coast style American craft beers, especially pale, IPA, red, and specialty ales. Thorough attenuation, temp tolerance, and good flocculation make this an easy strain to work with. Flavor is balanced to neutral with mild ester formation at warmer temperatures, allowing hops, character malts, and flavorings to show through.
WYeast 9097PC - Old Ale - Private Collection Yeast -A custom blend containing an attenuative ale strain along with a proportion of Brettanomyces to replicate historic styles which would have picked up funk during extended aging. 9097-PC will ferment well in high-gravity worts, producing fruity beers with great complexity. The Brettanomyces character adds a pie cherry-like flavor and sourness which will increase with age.

I was actually thinking about trying out 1007 in a Biere de Garde. I'm going to try to make it out this week. I still want a YB Saison Blend too.
