This thing is sexy. Too bad I bought the older POS prefab controller a while back.

Just because something newer has come out doesn't render the older ones obsolete. I still drive a 2001 Jetta that gets better mileage than a 2016 Jetta.

I've sold over 200 of the prefabbed ones and I only know of 3 that have failed. I've had more STC-100'0's fail (as a percentage) than the AC-211. The issue is that they get more press when they do fail. I still have faith in that product. I've spoken directly to the manufacturer and they are aware of the issue that cause relays' to stick open. To the best of their knowledge it was an isolated incident.

If anyone has concerns about their AC-211 or STC-1000 I will replace them without question. If you have bought into the general stereotype of quality based on place of manufacture, think about where every piece of electronics was made. Also, if retailers were to pull everything that failed once, we wouldn't be able to buy a vehicle, anywhere, ever (I say this as I book an appointment for my van based on a recent recall!)

I love my STC-1000! I want to pick up another in the near future. Dave...do you know if the STC-1000 you have in stock can be flashed? There is a certain version you can upgrade the firmware:

I need to make a public retraction apology here. My AC-211 was NOT the problem. My ferm chamber died and was still running, but was not cooling. After Dave put the numbers that had failed on here I felt something was up so I went back and plugged it into my old stc-1000 and then into the wall directly and the thing was running but the temp never dropped. So again, I apologize for misleading information.

So would you usually put the probe into a thermowell in your carboy, or would you just stick it in a glass of water to get an accurate read of fridge temp?

If the former, would your beer have enough thermal mass to make it way overshoot? Would it matter if I had more than one carboy in a deep freeze rather than just one in a minifridge?

Ideally, you are controlling the temperature of the beer, so the former is best. The latter is a close analog. The thermal mass of the beer would definitely temper any temp swings experienced by the glass/jug/growler of water.

Assuming the same volume, yeast, start date, etc, then two or four carboys in a fridge should act the same, but there certainly could be differences. So not ideal.

Now as soon as my current batch is out of the bucket I'll have to see if I can make the bucket fit in either of the two mini fridges we've inherited over the years.
