Hop of the Week - Cascade

Our hop of the week is Cascade! Cascade was first developed in the early 1970's through a U.S.D.A. breeding program at Oregon State University. This hop was originally bred from a cross of U.K. Fuggles and Russian Serebrianker. It was first commercially released in 1971-1972 and the first recorded commercial use was by the New Albion Brewing company in their signature American Pale Ale. It is now one of the most widely used hops in the world and a staple in all pale ale styles.

Cascade is an aroma hop that with an alpha acid content that typically ranges from 4.5-7.0 percent. This hop has a floral and citrus aroma that has been compared to mild grapefruit but also has a spicy note due to its derivation from Fuggles. Relative to other hops, Cascade has a high level of myrcene and farnesene (45-60 and 3-7 percent respectively) and this contributes to the aromatic properties of this hop. Cascade is currently being grown worldwide with the major producers being in New Zealand and the Western US.
