Fittings to finish off a manifold.

A friend did up a manifold for me, it's 3/4" brass fittings, I'm looking for a cheap way to bring the 3/4" down to 3/8" barb.
Ideally I'd use a 3/4" to 3/8" bushing and 3/8" to 5/16" barb fitting, but that will cost me $30+ for the 5 ports.
Any reasons against using plastic fittings on a CO2 manifold?
