Bypassing fridge thermostat (always on)

Hey all,

I want to remove the thermostat in my fermentation fridge for multiple reasons: it will give me more room, and I can drill a hole for the temperature probe and heater power there.

Here's some pics (insert in a moment):


White (neutral), black (hot), red (same side hot??), green (ground). What am I looking at there?

Here's a shot of the inside of the thermostat:


It would be awesome if I could jumper the red and black on the fridge side of the cable block. Should I get out the multimetre?

My multimetre was dead so I tried it anyways and it worked. This should also help cold crashing and lagering, although I don't really feel like tying this thing up with lagers.
