Thoughts on Mini Mash Recipe
Mash in 2 gallons of water for 60 minutes.......
2 Row @ 1.4 kg
Cara pils @ 455 g
Crystal 60 @ 225 g
Caramunich @ 225 g
Sarge with .5 gallon of 170°f water ......
60 minute boil......
1.5 oz cascade @ 60
.5 oz cascade @ 10
1 tsp of Irish moss @ 10
Flame out.....
Add 2 lb of Munich LME
Yeast....US-05
Just looking for some thoughts on this 23 L recipe. Should the mash be 90 minutes? Grain portions ? How much sparge water to use?? What to expect for taste ect......

Just to clarify the recipe at top is for a small batch and you want to scale it up to 23L? Have you ever used Beersmith? It is great software for building recipes with. If you modify equipment profiles it even is pretty good at telling you how much mash and sparge water is required.

Other thought is that you should boil your LME for at least 10 minutes ...

I don't think there's a hard and fast rule on LME boil time. Basically, you want to bring it to a boil to reduce the risk of contamination and perhaps to get a hot break. I don't think you need a full 10 minutes for either of those things. I've added it at 5 mins with no issues, though never at flameout.
I think you should plug this recipe into Beersmith or similar software to get your numbers - strike water temp, volumes, estimated OG, ABV, etc. I'm not sure if your grist ratio or volumes are quite right.
I've found that going from full extract with steeping grain kits to partial/mini-mash recipes, there's level of malt freshness that I was never able to achieve before. And I can't detect that extract twang anymore, which is great.

If this is for a Pale Ale, your OG is about 1.040 and your IBU is about 42. Possibly low for a pale ale, but high IBU. I would do 3 lbs late addition for 1.048 and for hop schedule, I would do 1 OZ at 60, .5 at 15 and .5 at flame out. That will give you a more balanced beer. 32 IBU at 4.7% once everything is done.
