Breakfast Beer

Going to do a take on the Brooklyn Brew Shop's Tea and Toast recipe. For the toast I'm going to sub Victory for Biscuit. I'm changing the floral hops to Amarilo and Cascade but adding a touch of honey malt, looking for a marmalade effect. And finally going with S-04 instead of S-33 simply because I don't have S-33 (belgian ale yeast).
So hopefully I end up with Marmalade Toast and Tea, ie: Breakfast Beer. Going in the pot tomorrow morning, but any feedback on those ratios would be greatly appreciated!

@60 Amarilo 18 IBU
@30 Cascade 6.5 IBU
@10 Cascade 3.5 IBU
@5 Amarillo 2 IBU
@5 Bonus Fuggles! Whoops!
@0 Earl Gray (teabag) 5-10 minute steep as per book's instructions
Keep in mind this is only a 1 gallon batch so 1 teabag should be sufficient to extract enough flavours
(Edited ratios as per Jeff's suggestions and dropped the C15 a touch).

I think I'd cut the Victory quite a bit. It can easily overpower.

Hmm. That's what the book calls for Biscuit. Perhaps up the Munich so Victory and Munich are at even ratios?

I don't have S-33 here, but I have some T-58 which is a continental ale yeast if you're interested.

Well maybe had too many things going on at once because I gave the boil a little extra Fuggles infusion at the 5min point that was supposed to go in another batch. Whoops.

Had to try a little sample. Love it. Little bonus fuggles addition didn't hurt at all. One of my most complex beers yet.

Hey Keith. Well, it's toasty and sweet along with the citrusy hops as expected. But there's a crispness to go along with it that surprised me. I didn't add any gypsum, so might be that late addition of fuggles? Not sure. Also, the 1 gal. recipe only called for a single tea bag to steep at the end of boil, so other than some spiciness I find any tea flavours of the Earl Gray are muted. But then again it's only been 2 weeks since bottling so it will be interesting to see what flavours emerge after aging a bit.

I was expecting something completely different when I read breakfast beer. When I worked in ontario we used to have a customer who's breakfast beer was always Fax 10 and Giraff cans.But yours sounds much better!
