S'mores Smoked Stout
An improvement on my s'mores rauch from last year. Lots of smoke, chocolate and sweetness.


OG: 1.052
FG: 1.015
IBU: 33
SRM: 37
ABV: 5.1%

Batch size: 6G
90min boil

Fermentables:
2kg Maris Otter (38%)
1.5kg Smoked Malt (28%)
500g Honet Malt ( 9.6% )
500g Munich (9.6% )
300g Chocolat Malt ( 5.8% )
200g Black Malt ( 3.8% )
200g Crystal 110 ( 3.8% )
1 jumbo marshmallow ( toasted ) @ end of boil

Hops:
20g Magnum 12% [ 60min ]
14g Fuggle 4.5% [ 30min ]
14g Fuggle 4.5% [ 5 min ]


Secondary:
50g cacao nibs ( toasted ) - 7 days
5ml vanila extract ( I ran out ) - 7 days

Water:
Cole Harbour's Best

Yeast:
WLP002 English ale

Interestingly, I feel like I get more from that one toasted marshmallow (some really nice burnt sugar character) than from the cacao nibs and vanilla (although I'm sure I'd miss them if they weren't there). I'm enjoying the smoke level despite thinking that nearly 30% seems high for smoked malt percentage. Super-drinkable with a fairly dry finish considering the OG. Enjoyed this, thanks.

Coincidentally, I had another smokey beer just before this one (Propeller spark)... I liked yours more. Nicely balanced. I feel like I would've liked it just a little boozier. Quite enjoyable.Image

Love this beer! Tasty and complex, rich in flavour. Surprising how toasted marshmallow and cacao nibs add to the roastiness. How long did you roast the nibs?

Also, I am inspired by your use of honey malt. I have a lot of honey malt but have not used it after being disappointed by it. I am going wto re-visted some of my recipes and throw some in.

this one was a shock to the system... I'm trying to catch up on the advent beers so I've just been grabbing them out of the fridge at random without looking at the corresponding recipe - I wasn't quite prepared for that much smoked malt :)

I found it mellowed out nicely as it warmed up a little - is that normal for a smoked beer?
