An homage to Westvleteren Blond (the one with the Green Cap, hence the name)

FG: 1.008
IBU: 35
SRM: 4
ABV: 5.7%

Batch size: 6G

Grains:
Euro-Pils Malt (CMC) (48%)
Maris Otter (Bairds) (48%)
Cane Sugar (4%)

Hops:
14 g Magnum [14 %] - Boil 60.0 min
28.3g Hallertauer Mittelfrueh [2.5%] - Boil 20 min
28.3g Styrian Goldings [3.9%] - Boil 10 min

Water:
Light & Hoppy

Yeast:
Abbey Ale (WLP530) - 1pkg
On tap: APA, Dubbel, Dark Mild
Fermenting: Brett Saison 2022, Schwarzbier, APA, Sour Brown,
Coming up: American Wheat (Fruited), Vienna Lager, Dortmunder

Sampling a bottle and the beer still seems way under-carbed for a Belgian. Apologies for another carbonation issue (ran into the same thing last year).
On tap: APA, Dubbel, Dark Mild
Fermenting: Brett Saison 2022, Schwarzbier, APA, Sour Brown,
Coming up: American Wheat (Fruited), Vienna Lager, Dortmunder
Bottled: Brett Saison 2020, Brett Saison 2021, Baltic Porter

I don't recall ever having tried the original "green cap", but this was phenomenal! i always try to guess the style before i look-up the recipe and had in mind a Table beer sort of brew with a champagne-aged profile. While i not all that naive to think that any of the Advent club has champagne barrels just lying around, this is still how it came to me while happily sipping at this. am surprised now at how simple the grain bill was.

Don't sweat it Cam, mine was undercarbed but I still enjoyed it. Simple but tasty beer. What temp did you ferment it at ?

Thanks, I think pitched around 65F then let it free rise into the low 70s

Low carbonation, which I like. Nice, clean unusual Belgian. Little-to-no aftertaste. Easy drinkin' beer.

Undercarbed as well, but that didn't take away from it. Really enjoyed it. Thanks for the share.
