DECEMBEER 2022-17 December - Just Razzin' Ya

Maris Otter 4.13kg(71.7%)
Munich 0.65kg(11.2%)
Black Patent Malt 0.39kg(6.7%)
RO water treated with 2g each gypsum and chalk and 1.5g calcium chloride in the mash.
56g Bramling Cross @60min in the boil
Fermented with US05

Added 400g frozen raspberries after fermentation had finished for 5 days before kegging.
OG 1.053
FG 1.012
5.4% abv, 36 IBU


I've made this once or twice before, and usually gotten a stronger raspberrry flavour out of it. Looking back at my older recipes, I used 600g fruit in the past. I would just buy a bag and add the whole thing to the fermenter, which is what I did this time. I guess now, without my noticing, Sobeys cut down on the size of their bags of frozen fruit. Thanks shrinkflation, should have been paying closer attention

Regardless of the shrinkflation this was a very enjoyable beer. Mine was a little lite on carbonation but didn’t take away from the beer. The amount of raspberries was perfect for me. The simple grain bill was tasty and provided a good canvas for the raspberries. Great beer

(stoopid Sobey's!). ...anyhoo, I remember a decade ago, brewing the beer-in-a-box Festa Brew kits, and adding strawberries to a stout batch, and not really succeeding. You have obviously adapted this wonderfully! the base stout grain recipe among one of the simplest i've seen, and full-on yummy raspberry flavour! thank you for sharing this brew!

Just having my bottle now, it is definitely under carbed. I picked up a beer gun for bottling this and went with directions I found. Think I need to tweak my procedure a little bit

This was a really tasty beer. It is a minor shame that the carb was a little low, but aside from that it was nicely balanced, and you could definitely taste the berries... reminded me a litle of black forest cheesecake. My family loves ftozen raspberries, but they are so darn expensive now with the shrinkflation if you can't find em on sale. Superstore dropped first to 400g, and then agaim to 300g a few months after that! Criminal! I am sorely tempted to try adding some to my next stout in a little side batch. Thanks for the share.Image

Ours was carbonated perfectly. Really enjoyed this one. The balance between the fruit and the malt was lovely.
